Passionate about cooking since his childhood in Germany, Martin Simolka perfected his style in the most prestigious Berlin and Paris establishments, from the legendary Hotel Adlon Kempinski to Pavillon Ledoyen, Shangri-La and George V, before becoming Premier Sous-Chef at The Peninsula. He then took the reins at Molitor, where his cuisine gained in authenticity and modernity, before establishing his signature style at Rivages, now recognised as a refined bistronomic restaurant experience in the heart of the Opéra district in Paris.
